Raw Nut Butter Chocolate Pie

Finally, what you all have been waiting so patiently for!! :)

*BEWARE this is SO unbelievably good you may want to eat the whole thing in one sitting, BUT DON'T!! It is also SO incredibly rich, it's like two meals in one slice-- so pace yourself! ;)*

 Raw Nut Butter Chocolate Pie

1 cup raw nut butter of choice (salted or unsalted). Peanut Butter is classic, but personally I love almond butter best!
3 medium, RIPE bananas
2 tsp pure vanilla extract
1/8 tsp salt (or to taste)
1/4 cup raw coconut oil, melted
Maple syrup or sweetener of choice to taste

Blend everything together very, very well (Vita Mix or Blentec is best!). Pour into a prepared pie crust (see below recipe) or spring-form pan-- this can easily be crustless!-- and freeze until firm. Pie should be kept cold till served.

30-second Chocolate Pie Crust, V/GF

2 tbsp cocoa powder
1/2 cup raw cashews or almonds
1/2 cup shredded coconut (unsweetened)
1/8 tsp salt
scant 1/2 cup pitted dates (soft)
*if the crust isn't holding together well, add a little bit of raw honey*

Combine all ingredients in a food processor and blend. Then transfer to an 8inch baking dish. Using a piece of wax or parchment paper, smash into the pan and pour filling on top.

Drizzle melted dark chocolate on top for REAL decadence! :)
